And now for something completely different... Is it turkey? Is it chicken? No, it's Seitan! Seitan, (pronounced say-tahn) is the Japanese term for cooked wheat gluten, which is high in protein and low in fat. Seitan has been a traditional food among Buddhists for hundreds of years. Often called 'meat of wheat' because of its amazing ability to mimic meat in taste and texture, Seitan has been a favorite with vegetarians and vegans in this country for several decades. Of course you don't have to be a Buddhist or even a vegetarian to enjoy Seitan. Try it in a pot pie or serve it with gravy and mashed potatoes and you'll see what we're talking about!
