Tofu can be frozen, but this must be done for at least 48 hours. This dries out the tofu and makes it easier to crumble, making it a good substitute for ground beef in tacos, chili and lasagna. Once defrosted, tofu can be rehydrated by soaking in a container of fresh water overnight.

Fat, trans fatty acids

Trans fatty acids are formed from oils that have been chemically transformed from their liquid state (at room temperature) into a solid by a process called hydrogenation. This procedure adds extra hydrogen atoms into unsaturated fats, creating trans fatty acids and changing the mixture into a saturated fat, eliminating the polyunsaturated benefits. Trans fatty acids are found in highly processed foods such as margarine or cookies. Any food that has 'hydrogenated oils' or 'partially hydrogenated oils' on the label contains trans fatty acids. All TofuTown and White Wave products are free of trans fatty acids.

Glucono-delta-lactone

What is Celiac-Sprue? Are TofuTown and White Wave products acceptable for people with Celiac-Sprue?

Celiac-Sprue (or Celiac's) is a common disease in which the lining of the small intestine is damaged in response to ingestion of gluten and similar proteins, which are found in wheat, rye, oats, barley and other grains including hybrid grains such as triticale. The intestines contain projections called villi, which normally absorb nutrients. Celiac disease causes the villi to become flattened and thus unable to absorb minerals and nutrients.

Symptoms of Celiac disease range from abdominal cramping, diarrhea, weight loss and malnutrition to latent symptoms such as nutrient deficiencies with no gastrointestinal symptoms. If this disease is left untreated, the results can be quite problematic. People who do not treat this disease properly could develop osteoporosis, anemia, thyroid disease and vitamin/mineral deficiencies. A strict gluten-free diet can help prevent almost all of the complications caused by Celiac disease.

We have included a list of our gluten-free (no rye, oats, wheat, or barley) products below. The natural flavors in the products below do not contain gluten.

What is sake? Isn't that alcohol?

Sake is a Japanese wine made from fermented rice. It has a relatively low alcohol content of 12 to 16 percent. Sake is used as a flavoring in the Mediterranean Tahini Tofu Tenders. Adding sake does introduce a small quantity of alcohol into the Tofu Tender sauce. However, during production, the alcohol is evaporated leaving only the flavor of sake— not the alcohol, only trace amounts may remain.

What is Tofu?

Tofu is a curd made directly from soybeans. It resembles a soft white cheese. Traditionally, soybeans are washed, soaked and then ground with water. The slurry is then filtered to produce soymilk. The milk is heated, a coagulant is added which causes the formation of the curd and then the curd is pressed to remove the excess water and is formed into tofu.

White Wave Tofu is made from organic or transitional soybeans that were produced without the use of biotechnology. Tofu should be stored in the refrigerator, submerged in water in a closed container. The water should be changed daily to ensure freshness. See our Tofu recipes for ideas about incorporating Tofu into your diet.
